Dreamfields pasta produces same glucose curve as normal pasta, study shows

The only caveat here is that Dreamfields recommends that their pasta be cooked no longer than 9 minutes, and that cooking it the same length as normal pasta would degrade the matrix which traps the starch granules, allowing them to be digested normally.The result was the same; that is, the curves were essentially identical (Fig. 1). In 10 people without diabetes, the Dreamfields pasta product we purchased did not result in an improved glucose excursion when compared with a commercially available traditional pasta product as would have been expected based upon the company's claim.
Guess the only way to know for sure is still the same: get a blood glucose meter and check it for yourself.Before one can become successful, he must learn to tell the difference between what is impossible and what is merely difficult.

Study is too generous a term for that article. There are way too many uncontrolled variables and the sample size is way too small.

One of these days I am going to bite the bullet and get a glucose meter so I can check for myself.
