Yummy treat for low carbers
I got this from Mark Sissom. Take a can of good quality coconut milk and put it in the fridge for a couple hours. When you open the can you'll see a white cream solid, scoop that into a bowl and leave the clear liquid behind. (Don't throw it out, though, just drink it or add it to a smoothie).
Beat the coconut cream for a couple minutes with a hand mixer until it fluffs up like whipped cream - 3-5 minutes max. Stir in 4 oz of melted good quality dark chocolate and chill for 30 minutes. Delicious chocolate mousse!
Or just take the whipped coconut cream and layer it in a cup with some fresh blueberries. That is my Sweetie's favorite way of eating it.
Be careful not to over beat the cream though or it will break and get grainy. Stop when it looks like soft whipped cream. The absence of sugar means this cream will not get as stiff as regular whipped cream but it is just as delicious.Barry McConnell

Good idea. I think I'm going to get a coconut or two for the house.
With mom-in-law back in town the kitchen is filled with her carbohydrate yummies - breads, cookies, grains, etc. And she is borderline diabetic and won't change her diet. Grrrrrr............I realize you think you understand what you thought I said, but what I am not so sure about is whether what you think you heard is what I think I meant.

I, myself, discard the opalescent runny liquid left over in the can--I think it is pretty much all water and Guar gum. The good stuff solidifies upon rest and/or refrigeration.
I love coconut milk. Hard to say if I love it more than good old heavy cream, though. Now if only I lived in a state where I could buy raw heavy cream...

I try to make sure I get the coconut milk without guar in it. I forget the brand right now but I've become fanatic about reading labels. The watery part still has some coconut flavor to it so it makes a nice undertone in the smoothie.
